Healthy Muffins

Muffins bake way faster than bread. Bake muffins by using a covered shallow pan over a camp stove. One minute cooking over the fire alternated with one minute off the fire will sort of bake the muffin batter. Although it will turn out crumbly. Use same cook time as the recipe baking time at 425 degrees. Many muffin recipes can be altered like that.

Example:

Recipe for baking at home:

Healthy Muffins:

Ingredients:

    1/4 cup white flour
    1 cup oat bran cereal flour
    1/3 cup powdered dry milk
    1/8 tsp salt
    2 teaspoons baking powder
    ===================
    Total: 5 dry ingredients

    1/2 cup water
    8 drops liquid Stevia (equals 1 teaspoon sugar in sweetness, or use sugar).
    2 tablespoons All Whites or Eggbeaters liquid egg whites from carton.
    1 Tablespoon canola oil.
    Some PAM cooking spray.
    ==========================
    Total: 5 liquid ingredients.

Instructions:
    Preheat toaster oven 425.
    Stir dry ingredients together.
    Add liquid ingredients (except PAM).
    Stir well.
    Spray coat with PAM a 6 hole muffin pan(fits toaster oven).
    Bake 30 minutes.

Modified recipe for camp stove:

(Using your regular shallow camp stove pan, not a muffin tin).

Substitute enough dry egg powder to make 2 eggs instead of the liquid all whites.

Omit the PAM.

Stir dry ingredients together.

Omit the PAM but mix in all other wet ingredients except for the tablespoon of canola oil. To make up for this loss of one tablespoon of liquid (the canola oil) add one more tablespoon of water to keep the wet/dry consistency.

Now add the tablespoon of canola oil to bottom of pan.

Tilt pan and turn it to oil the bottom one inch sides of the pan. This will also coat the pan bottom.

Cook muffin batter with pan covered (lid on). Alternating one minute over camp stove fire and then one minute off, etc. for 30 minutes.

Oat bran cereal flour is found in flour section of supermarket, Bob's Red Mill brand is popular in California.

This is a plain recipe, can improve several ways, for instance by adding chopped nuts.

I've used this basic recipe many times!
